চিকেন রেজালা একটি ঐতিহ্যবাহী মুঘলাই রান্না, যা তার সাদা, মোলায়েম ও সুগন্ধি গ্রেভির জন্য বিশেষভাবে পরিচিত। নরম চিকেনের টুকরো কাজু বাটা, দই, ঘি ও এলাচ-লবঙ্গ-দারুচিনির মতো গোটা মশলায় ধীরে ধীরে রান্না করা হয়। লাল ঝাল বা বেশি মশলার পরিবর্তে এই পদে থাকে হালকা মিষ্টি আর পরিমিত সুগন্ধ।
